Toffee Bars

This is an easy delicacy to make, and although not strenuous, the outcome is delightfully tasty. They do not take long to bake or make. I learned this recipe from my grandmother. She loves to cook and put together a whole cookbook of her favorite recipes for my family. whenever she visits she never forgets to grumpily proclaim that we “never use that cookbook” just to hear our shrill complaints that of course we do. Hearing this always seems to put a smile on her face. My Grandmother says that this was one of my mother’s favorites when she was a kid, apparently she could never stop eating them. This is still true, and if a batch is made in my house you can be sure that they will not last long. These crumbly melt-in-your-mouth delights are perfect for a gathering of friends or family and are impossible to stop eating.

1 cup butter

1 cup light brown sugar

1 teaspoon vanilla

1 egg

2 cups flour

1/4 teaspoon salt

1 pkg. (6 oz.) chocolate chips

3/4 cup nuts

In a mixing bowl, cream butter and sugar until light and fluffy; add vanilla and egg and beat thoroughly. Mix together salt and flour and add gradually to creamed mixture. spread evenly in a buttered 14×10-baking pan. bake at 350 degrees for 20-25 minutes. While hot, sprinkle with chocolate chips. When melted spread evenly. Sprinkle with nuts and press down slightly. Allow to cool. Cut into bars. Enjoy!
