Pumpkin Bread

Getting in touch with the feeling of Autumn, We’ve realized that upcoming holidays are right around the corner. With Halloween comes pumpkins galore and pumpkin bread is something that we happen to love to eat morning, afternoon, and night. Dense and full of the delicious flavors of pumpkin, cinnamon, and nutmeg, we love eating  thick, warm slices with a glass of milk.  The only downside is how long it takes to bake in the oven. We can’t stand the wait!


Recipe:

2 cups flour ( whole wheat or white)

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt, cinnamon, and nutmeg

1 stick of softened unsalted butter

1 cup brown sugar

1/4 cup white sugar

3 eggs

1 cup canned pumpkin

Optional chocolate chips

     Combine the flour, baking powder and soda, salt, cinnamon, and nutmeg, in a medium bowl. Cream the butter and both sugars in a large bowl with an electric mixer until fluffy. Beat in the eggs, scraping the bowl, then add the pumpkin and vanilla. Next, mix in the dry ingredients only until moistened, and stir in the chocolate chips. Pour into greased loaf pan and bake for about an hour in a 350 degree oven. Take it out, let it cool, and eat!
