Pasta Sauces

To go along with the delicious pasta dough I decided to give you some ideas on delicious sauces to put on top. As I have previously said, my friends and I love pasta and it is so pleasing to have made everything from scratch! Try a sauce, I’d be very surprised if you weren’t pleased!

Alfredo Sauce: Alfredo sauce can take a little tampering with as everyone likes theirs a little bit different. My advice is to keep tasting until you get the flavor that you like! If you ask me I love it creamy with garlic and shrimp!

1/4 cup butter                                                                   

1 cup cream

1 clove crushed garlic

Approx. 2 cups grated Parmesan cheese

A few tablespoon of chopped parsley

Optional… small chopped chicken breast or 1 1/2 cups shrimp

Melt the butter in a sauce pan then add the cream and simmer for a few minutes. Add the garlic and cheese, I would advise a constant stirring to prevent the cheese from clumping. The smoother the better! Stir in the parsley, and then the chicken or shrimp. Meanwhile, have your pasta noodles cook, strain them and put them into a large bowl. Pour sauce on top and stir. Tell the rest of your family to get it while it’s hot! So good!

If you decided to add chicken or shrimp then there are a few more steps. Cook the chicken in a pan with a little olive oil until golden brown, don’t cook it too long or it will dry out! Put them into your sauce at the end then serve.  With the shrimp, take the tails off and just throw them into your sauce. Let them cook with the heat around medium low for approximately 5 minutes, they should be pink and done! Pour onto your choice of noodles, homemade is more fun, and eat!

Pesto Sauce: Pesto sauce is so yummy, and getting the basil from your garden makes it so much better! Quick and easy, I very much recommend it. Tip: Make sure you have enough basil, I always seem to run out!

3 cups basil leaves

A few cloves of garlic                                             

1 cup olive oil

1/2 cup  toasted pine nuts

3/4 cup Parmesan cheese

Salt and pepper

Optional: Small cooked chicken breast

Put the basil, pine nuts, garlic, and cheese in a food processor. As it is running, pour oil in slowly until the desired thickness. Add salt and pepper accordingly. If you want to add chicken, cut it into small pieces and cook it in olive in a pan. Add to cooked and strained pasta and eat! Pesto is such a great sauce because you can use it with so many other types of food. I like to save a little extra and make roast beef sandwiches with homemade pesto the next day!

Cheese Sauce: Taught by my friend’s mother, this sauce is simple yet delicious. It tastes so much better then buying a box of macaroni.

Cheddar cheese


Salt and pepper



Optional: For a more flavorful sauce add a little cayenne pepper flakes and worcester sauce

Grate about 1 1/2 cups of cheese and put into a sauce pan. Coat with a spoonful of flour. Add about 2 tablespoons of butter and a splash of milk. Turn the heat on low and stir constantly. If it is too thick, slowly add more milk, and too thin slowly add flour. Sprinkle in salt and pepper.The result should be thick and cheesy! Add to noodles and serve!
